For the stock
8 cups of water
1lb chicken bones
1 lb chicken wings
1 big knob ginger
6 whole scallions
8 dried shittake mushrooms
For the tare(seasoning)
1/2 cup soy sauce
1/2 cup mirin
1/2 cup white wine or sake
2 tbls white miso
6 tbls sesame Oil
2 tsp msg
For the chicken or duck marinade
2 tbls oil
2 chicken breast/duck breast
3 tbls mirin
3 tbls soy sauce
For the eggs: 6 units of 5 1/2 minute boiled eggs.
Peel eggs when cold.
For assembly:
600 g ramen noodles
6 sheets of seaweed
3 scallions sliced
Sprouts
2 bok choy split and blanched
Recipe:
Soup
1. Boil all the soup ingredients, and simmer for 4-5 hours.
Tare
1. Mix all the seasonings, except the sesame oil
For the Protien
1. Marinade for 1 hour.
2. Sear for 3-4 minutes a side.
3. Slice into a 1/4 inch slices and put aside.
To assemble the bowl:
1. Add 3 tbls of the tare to the bottom of the bowl. Add 1 tsp of sesame oil.
2. Then surround the bowl with seaweed,the Ramen noodles in the center and the bok choy.
3. Add the hot soup with the shittake mushrooms, chicken or duck sliced, the boiled egg, sprouts and scallions.
